Easy Lemon Loaf

I made this delicious lemon loaf last night and my family just devoured it!

It's fun to let little ones help pour ingredients in too, I'm always trying to get my son to help me out in the kitchen and he just loves it (:

You will need the following ingredients:

4 eggs
1 1/2 cups of sugar
1/2 cup oil
2 cups flour
4 Tablespoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 Tablespoons of lemon juice
1 teaspoon vanilla
1 cup of confectioners sugar
2 tablespoons of milk
2 tablespoons of lemon juice

Before your start mixing everything together, preheat your oven to 350 degrees and grease and flour your loaf pan

1. combine the eggs and the oil with a mixer until smooth, then slowly add in the oil

2. gradually incorporate the 2 cups of flour, the baking powder and salt

3. after that is well mixed scrape the edges of the bowl well with a cake scraper and slowly pour in the milk, lemon juice and vanilla

4. pour into your prepared pan and bake for 40 minutes 

5. make your glaze by mixing the confectioners sugar, milk and lemon juice and pour over the loaf once its done baking

Meatballs!

Whenever I suggest making these, my son goes crazy and insists on having them for dinner. So, I only bring it up if I have full intentions on making them!

You will need....

1 pound ground chuck
1 egg
1 piece of bread (grated into crumbs, or you can buy bread crumbs)
seasonings! onion powder, garlic powder, tony's, salt and pepper
splash of milk
flour (for coating the meatballs)
oil (for frying)

**Healthy option, instead of frying these, you can bake them!

1. combine all ingredients in a large mixing bowl

2. form small meatballs and roll them around in the flour then gently place them in the hot oil in your frying pan

3. cook on each side for about 4 minutes or until golden brown and crispy

4. lay on a plate with napkins on it to drain the grease off the meatballs

5. enjoy with marinara sauce, noodles, parmesan and garlic cheddar biscuits!

Chunky Homemade Marinara

The store bought stuff just really isn't worth the expense when you can make it at home so easily!

You will need:
1 large onion
3 mini sweet bell peppers
2 tablespoons of butter
3 tablespoons of olive oil
1 24 oz can of tomato sauce
1 can of diced tomatoes with green chiles
1 small can of tomato paste
garlic powder
onion powder
salt & pepper
1 tablespoon of sugar



1. In a large pot start sweating out your diced onion and diced peppers with the butter and olive oil
 
2. stir that up and get the sautéing til veggies are softened (add your seasonings)

3. once they are good and soft (not browned) add in your canned tomato stuff and fill up your 24 oz can with water and add that to your pot

4. stir well and taste test it a bit to make your you have your seasonings on point!

Cheddar Garlic Buttermilk Biscuit Pie

I was being adventurous with cooking dinner last night and decided to give this recipe a shot and like all things that I make, I just looked at a bunch of different recipes to get a good idea and then just go with it  and make it my own.

What you will need:

2 cups self rising flour
7 tablespoons of COLD butter
garlic powder
salt & pepper
italian seasoning

about a cup and a half of buttermilk ( I just pour until it has the right consistency)
a handful of cheddar cheese
cooking spray
pastry cutter
8"8 pan
large bowl

1. In a large bowl put your flour in there and the butter, with a pastry cutter cut up the butter into the flour until it resembles very coarse crumbles 

2. add in your seasonings

3. pour your buttermilk in and mix well

4. spray your 8"8 pan with cooking spray

5. lay your biscuit mixture into the pan, spread out evenly

6. bake at 350 degrees for about 40 minutes, or until the bottom and sides are brown

7. add the cheese at the last minute. 

8. enjoy this dipped in some delicious home made marinara!
